  • Heat oil in large saucepan and saute onion, garlic and paprika till browned.
  • Add stock, tomatoes, balsamic vinegar, sugar, tomato paste, potatoes and carrot and stir. Simmer for 20 minutes.
  • Add red lentils and kidney beans, stir and simmer for another 5 minutes.
  • Add leek, zucchini, broccoli and green beans, stir and simmer for another 10 minutes.
  • Serve with a little cheese grated on top and a slice of bread :).

I live in Perth, Australia and am a full-time uni student in an IT/Library Science bachelor course. I live with my fiance'. I recently found out that I'm allergic to Casein (the milk protein) and although it's great that we found out why I have always felt bad, my dietitian wants me to go on a mostly vegan diet, with meat/eggs 1-2 times a week. Because we are such a small family it makes it hard to cook and I have no idea what i can do that both of us will like.
