      Very good because so simple, I made just a few changes. I added chicken bouillon, italian seasoning, crushed red pepper, all to taste. I thickened it with corn startch and then added cooked spaghetti noodles (broken in half). I then topped it with cilantro (because I simply needed to use it before it went bad, I love cilantro) and served with more lemon to be added to taste. It was killer, and my boyfriend totally loved it! oh, I used orange peppers for color, but green would have been best probably.

      We really enjoyed this easy stove-top meal. I did use the optional garlic and I thought the pan juices made a flavorful, delicious broth. I made enough for 3 servings. I would recommend a nice crusty bread on the side. I served with mashed potatoes.

      Very good, very easy (careful not to overcook), however not very flavorful. I ended up using a huge array of spices but it still didn't quite hit it. My mom ended up dousing hers in soy sauce :( Perhaps next time I'll try going an intensly spicy route with cumin and chili powder.

      Your daughter is a very promising cook. This made a very filling meal with minimal effort. I wish I had used a green or yellow pepper as that would have added to the striking color combinations. I used a couple less tomatoes as the cherry tomatoes I used were quite large and being the garlic lover that I am, I did add a touch of garlic. This recipe will go into my reserve file for those nights I am going solo.

      Karen you should be very proud of your DD....this chicken dish is delicious!! I used chicken breast tenderloins and the red pepper. The vegetables have a wonderful lemony fresh flavor and the chicken is moist and tender! Salt and pepper are the only seasonings needed, this is perfect! Thank you for posting and please thank your DD for creating!
